Crispy-Bottom Lazy Dumplings

They’re ready in around 20 minutes, beginner-friendly and packed with flavour, making them perfect for busy weeknights when you want something a little more exciting than the usual dinner rotation.

What you’ll need:
For the dumplings
- Wonton or dumpling wrappers
- 1 pound ground pork
- 2 spring onions, sliced
- 2 tablespoons garlic, minced
- 2 tablespoons ginger, minced
- 1 tablespoon soy sauce
- 1 tablespoon sesame seed oil
- ½ cup water
To finish
- Soy sauce
- Sliced spring onions
- Chilli oil
- Mayo
- Sweet chilli sauce
- Crispy onions
What you’ll need to do:
Step 1: Make the filling
Add the ground pork, sliced spring onions, soy sauce, sesame oil, garlic and ginger to a mixing bowl.
Mix everything together until combined, then slowly stir in the water. The filling should loosen slightly while still holding its shape. This helps keep the dumplings juicy once they cook.
Step 2: Shape the lazy dumplings
Heat a non-stick pan over a medium heat.
Spoon small balls of the pork mixture directly into the pan, leaving a little space between each one. Carefully place a wonton wrapper over each pork ball and use the back of a spoon to gently secure the wrapper around the filling.
Drizzle a small amount of oil over the top.
Step 3: Steam, then crisp
Add a splash of water to the pan and cover with a lid straight away.
Let the dumplings cook for 5–7 minutes, or until the pork is cooked through. Remove the lid and allow any remaining water to evaporate.
Keep cooking until the bottoms turn golden and crispy. That’s where all the magic happens.
Step 4: Add the toppings
Top the dumplings with soy sauce, sliced spring onions, chilli oil and a drizzle of Japanese mayo.
For our version, we swapped the Sriracha for sweet chilli sauce and added crispy onions for extra crunch. It adds a little sweetness, plenty of texture and gives the dish an even more takeaway-inspired feel.
Serve immediately while they’re hot, juicy and perfectly crispy underneath.
