Qmee Recipes – Double choc & peanut butter cookies
Try this simple double chocolate & peanut butter cookies recipe – it’s fail-safe every time! Make a batch of these deliciously gooey cookies and enjoy them with a glass of milk or a warm drink. You can even add some chopped nuts on the top to add to the texture.
Take a look at the ingredients you’ll need and the method you’ll need to follow to create these simple and easy, but absolutely delicious, cookies!
Here’s what you’ll need…
¼ cup unsalted butter softened at room temperature
½ cup light brown sugar
½ cup caster sugar
1 egg, beaten
¾ cup self-raising flour
2 tbsp cocoa powder
¼ tsp salt
1 cups milk chocolate, ¾ cup chopped into chunks and ¼ cup melted for drizzling
¼ cup peanut butter (crunchy or smooth is fine)
a handful of salted peanuts, roughly chopped
Here’s what you’ll need to do…
1. Heat the oven to 180c/160 fan/gas mark 4 and line two baking trays with parchment.
2.Using a food mixer or electric whisk beat the butter and sugar together until light and fluffy.
3.Add in the egg and whisk to combine then beat in the flour, cocoa powder, salt and chocolate chunks until fully incorporated.
4.Using a spoon swirl the peanut butter through the cookie dough.
5.Scoop the dough into 12 large cookies onto the two trays using a dessert spoon, leaving plenty of room between each cookie as they’ll spread.
6.Bake in the oven for 9-10 mins until still soft and melty in the middle.
7.They will look underbaked but will harden once cool.
8.Drizzle over the melted milk chocolate and top with a few chopped peanuts and a pinch of flaky sea salt.
