Super-Satisfying Salmon Poke Bowls

What you’ll need:

1/2 red onion (finely diced)

1/2 cup green onions (chopped)

1/3 cup soy sauce

2 Tbsp. rice wine vinegar

2 Tbsp. sesame oil

1/2 Tbsp. honey (or sugar)

1 clove garlic (minced)

1/2 tsp. ground ginger

1 lb. salmon (sushi-grade, cut into 3/4″ chunks)

1/2 cup shredded lettuce

1 medium carrot (sliced into thin matchsticks)

1 cup pineapple chunks

1/2 cucumber (sliced thinly into rounds)

1/2 cup edamame (shelled, cooked)

1 red bell pepper (sliced thinly into strips)

sliced green onions (for serving)

nori seaweed (Shredded)

cooked white rice (to serve)

sesame seeds

Sriracha sauce (for spicier version, optional)

What you’ll need to do:

Step 1: Make the marinade

Mix together the red onion, green onion, coconut aminos, vinegar, sesame oil, optional sweetener, garlic and ginger in a medium-sized bowl. Set the marinade aside.

Step 2: Coat the salmon

Remove the bones and skin from your salmon (if they’re present) and cut the fish into 3/4-inch chunks. Add the salmon to the bowl with the marinade and toss to coat all of the pieces. Adjust the seasonings as needed and place the bowl into the fridge until you’re ready to serve.

Step 3: Assemble the bowls

Evenly divide the prepared rice, salmon, pineapples, edamame and vegetables among two large serving bowls.

Step 4: Garnish & Serve

Sprinkle each bowl with sliced green onions, sesame seeds, shredded seaweed, sriracha, and more soy sauce on the side if desired.
