Qmee recipes – Artichoke & aubergine rice
This week we’ve found a super healthy, tasty one-pot artichoke & aubergine rice recipe. This dish is packed with healthy ingredients and is simple to make. Everything just needs to be thrown together and it’s ready in a flash!
This one-pot artichoke & aubergine rice is perfect for a quick, healthy and cost-efficient dinner. It’s delicious served both warm or cold so it makes a perfect lunch option too!

Here’s what you’ll need…
¼ cup olive oil
2 aubergines, cut into chunks
1 large onion, finely chopped
2 garlic cloves, crushed
small pack parsley leaves picked, stalks finely chopped
2 tsp smoked paprika
2 tsp turmeric
1 ¾ cups paella rice
6 ¼ cups Kallo vegetable stock
2 packs chargrilled artichokes
2 lemons 1 juiced, 1 cut into wedges to serve
Here’s what you’ll need to do…
1.Heat 2 tbsp of the oil in a large non-stick frying pan or paella pan.
2.Fry the aubergines until nicely coloured on all sides then remove and set aside.
3.Add an additional; tbsp of oil to the pan and lightly fry the onion for 2-3 mins or until softened.
4.Add the garlic and parsley stalks, and cook for a few more mins, then stir in the spices and rice until everything is well coated.
5.Heat for 2 mins, add half the stock and cook, uncovered, over medium heat for 20 mins, stirring occasionally to prevent it from sticking.
6.Nestle the aubergine and artichokes into the mixture, and pour over the rest of the stock and cook for 20 mins more or until the rice is cooked through.
7.Chop the parsley leaves, stir through with the lemon juice and season well.
8.Bring the whole pan to the table and spoon into bowls, with the lemon wedges on the side.
